Peaches have just started showing up here in Savannah and if there’s one thing I love about summer, it’s peaches. Second favorite thing about summer? Mint. I decided to combine the two flavors to make one of the ultimate summer treats – granita. To me, granita is the grown up version of slushies and sno-cones. Of course, I wouldn’t turn down a slushie or a sno-cone, but with a granita, you can really experiment with the flavors. It’s also way less time consuming than making ice cream!

Even though I have plenty of fresh peaches on hand, I decided to use frozen peaches this time. I’ve had a bag of frozen peaches in my freezer since winter and, well, it was time they got used. Fresh peaches are definitely preferable, but in a pinch, frozen works great. If you just want to make a peach granita sans mint, just leave out the mint and make the syrup with the sugar and water only. Feel free to experiment! If you come up with any amazing flavor combinations, let me know!
